아귀찜 이렇게 조리하세요 1. 아귀와 콩나물은 흐르는 물에 씻어 주세요.
2. 냄비에 물 1.5L와 아귀를 넣고 5분 정도 센불에서 끓여주세요. 생강즙 1티스푼과 굵은소금 1티스푼을 같이 넣으면 간도 되고 비린내도 제거됩니다.
3. 끓기 시작하면 콩나물을 넣은 다음 뚜껑을 덮고 5분 정도 더 센불에서 끓여 주세요.
4. 불을 약불로 낮춘 다음, 아귀를 삶은 국물을 한컵 반 정도만 남기고 따라내 주세요.
5. 따라낸 국물 중 적당량을 양념과 다진 마늘과 버무려 놓으세요.
6. 아귀찜에 들기름 1티스푼을 넣고 중간불에서 살짝 볶은 다음 양념장을 아귀찜에 버무려 주세요.
7. 미나리와 파를 넣고 버무려 주면 완성입니다.
