손질법 1. 해삼의 양쪽 끝부분을 잘라 주세요.
2. 배 쪽으로 칼이나 가위를 넣어 자릅니다.
3. 몸통을 반으로 가르면 해삼의 노란색 내장이 보입니다.
4. 노란색 내장을 따로 담아 두세요. 내장을 그대로 드실 때는 신선도를 먼저 체크해 주세요.
Tip. 손질 전, 해삼이 물렁하게 느껴질 때 칼등으로 여러 번 두드려주면 단단해집니다.
Tip. 내장을 제거한 해삼은 흐르는 물에 3초 정도 살짝 씻어 드세요. 단, 너무 오래 씻으면 해삼 특유의 맛과 식감을 해칠 수 있으니 유의해 주세요.
용도에 따라 써는 법 ・횟감용 : 칼을 비스듬하게 잡고 가로 방향으로 작게 편 썰기 하세요.
・요리용 : 해삼을 세로 방향으로 길고 얇게 썰어 주세요.
